The microclimate
Brioso is born in Azpitia, the “Balcony of the Sky,” an hour and a half south of Lima. Its unique terroir is shaped by the confluence of the Mala River, the fertile soils of the Azpitia valley, and the natural protection of the surrounding hills.
This microclimate acts as a natural thermal regulator, where the Pacific Ocean breeze cools the vineyards after intense sunny days, creating the precise balance of sugar and acidity that defines the vibrant character of our grapes.
Balance
When the grapes reach their peak expression, they are hand-harvested at night under the full moon. Through meticulous green pruning, we select only the clusters with exceptional concentration and natural sweetness.
This nocturnal ritual allows us to preserve the fruit’s freshness intact and transform it into a premium spirit.
Passion
Brioso is an artisanal, limited-edition spirit, created on a small four-hectare estate using traditional techniques that honor Peru’s pisco heritage.
Each bottle is a testament to our terroir and to the passion of those who cultivate and transform the grapes with utmost patience.
